Notty’s Italian Burrito Expanding to Lincoln

The original Italian burrito is rolling into Lincoln.

Following a recent expansion to Rocklin in April, Notty’s Italian Burrito is planning its third location at 129 Ferrari Ranch Rd, Suite 150, confirmed a representative from the company.

Notty’s was born from the mind of Chris Ewing—best known as the founder of Shari’s Berries and software company One Inc.—who wanted to make Italian food more portable. The idea took shape in Zephyr Cove, Nevada in 2021 after Ewing wondered, “What if you could eat spaghetti on a road trip without the mess?”

The result? Italian flavors wrapped up like a burrito. The menu boasts 18 inventive options, ranging from familiar favorites like Cheese, Sausage, and Veggie Lovers to more playful creations such as the Hawaiian, Tua Via, and Hurricane.

Each burrito starts with freshly made dough (just six basic ingredients) that’s thin yet sturdy, filled with rich sauces and premium ingredients, then air-fried until crisp. Think of it as “lighter than a calzone but just as satisfying,” says the brand.

The company representative told What Now Sacramento that construction is scheduled to wrap up early next month, with a grand opening scheduled for mid-July 2025.
