Midnight Dim Sum is preparing to open at 1340 Marine Drive in Bremerton, according to a Washington state liquor license application. Owner Jeremy Chen told What Now Seattle that he is targeting a mid-October opening, depending on the buildout and final inspections.
Chen developed the concept after noticing limited options for hot food in the area late at night. He wants customers ordering after 10:30 p.m. to have an alternative to fast food, with dim sum and other Cantonese-style dishes available until 1 a.m.
The restaurant will primarily handle online, pickup, and delivery orders. A small seating area will let customers eat on-site.
Midnight Dim Sum’s Facebook page previews dumplings, buns, and siu mai steamed to order. Chen is still developing the full menu and expects it to change over time, potentially each month. He also plans to serve beer, sake, and wine.
Chen owns the building where Midnight Dim Sum will operate. His other restaurants include Yamazaki Sushi & Steaks at 1405 NE McWilliams Road in Bremerton and Fujiyama Japanese Steakhouse at 9989 Silverdale Way NW, Suite 109, in Silverdale.
