Scottsdale’s The Shops at Gainey Village recently welcomed its newest fast-casual eatery. Former Arizona Diamondbacks pitcher Todd Stottlemyer’s Koibito Poké recently opened at 8877 N Scottsdale Road in the retail community. Stottlemyre’s private equity group bought and rebranded the concept in 2019.
The Gainey Village location followed the eatery’s three other Valley locations, and, according to Phoenix Business Journal, will serve as the company’s model for future franchise sites.
“Each poke bowl at Koibito is custom-made using fresh fish, chicken or tofu, a variety of healthy vegetables and produce, and house-made sauces, so it’s a great healthy alternative for those looking to ditch processed foods this year,” shares the company’s website. The customizable menu allows you to choose your bowl size, base, protein, sauce, and toppings. And don’t forget the garnish!
Phoenix Business Journal shared Koibito’s plans for future AZ sites as well as sites in states nation-wide. These expansions will begin in the next 12 months.
