CEO and Co-Founder of Island Fin Poké Company, Mark Setterington, announces plans for additional restaurant locations throughout Central Florida.

Founded in 2017, Island Fin Poké Company serves Hawaiian-style poké bowls with a base of white or brown rice or spring salad mix, meat, fish or vegan protein options, mix-ins, sauces and toppings. Their menu also includes Dole Whip pineapple ice cream.

With six locations in the area currently, Setterington anticipates that there’s room for an additional five Island Fin Poké Company restaurants locally. The existing locations include franchises in Oviedo, Lake Nona, Windermere, Wekiwa Springs, Lake Mary and Winter Springs.

Plans are already moving forward for restaurants in Winter Garden and the Space Coast, but Setterington declined to give exact locations or timelines for those openings.

With 16 restaurants in eight states, Island Fin Poké Company franchises are planned for other areas of Florida as well, including The Villages, Trinity, Tallahassee, Panama City Beach, Tampa, Hyde Park and St. Petersburg.

Each 900-1,500 square foot franchise is styled after a surf shack environment. The company anticipates reaching 25 restaurants across the country by the end of 2021, with six more opening in early 2022.
