Pizzana, from Sprinkles Cupcakes founder Candace Nelson, is opening a Dallas location next year. The star-backed “neo-Neapolitan” concept will open in the Knox Street retail in the new Weir’s Plaza Tower Development.
Founded in the Golden State in 2017 by Nelson and her husband, Charles, the brand includes two high-profile partners – actor Chris O’Donnell and chef Daniele Uditi, the latter of whom grew up in Naples, Italy. It has attracted accolades from the press and celebrity fans including Reese Witherspoon, Steve Carrell, Gwyneth Paltrow and Usher.
Pizzana’s pizza offering stands apart thanks to Uditi’s signature “slow dough” that is meticulously prepared with a blend of imported Italian flavors and then allowed to ferment for 48 hours. And instead of being baked in a 900 degree oven for just 90 seconds, Pizzana’s pizzas are baked at 650 to 700 degrees for three to four minutes. This process results in a light crust that’s still sturdy to pick up and easy to digest.
Salads, antipasti, and wood fired vegetables are also on the menu. It rounds out nicely with Italian-inspired desserts that were created by Nelson herself who serves as the restaurant’s executive pastry chef.
The Dallas location will also feature a full bar, serving beer, wine and cocktails.
Pizzana currently has two Los Angeles locations in Brentwood and West Hollywood, making Dallas the brand’s first foray outside of California. The Dallas Morning News reports that Nelson and her team have plans to open more Pizzanas in Texas.
