A new Colorado-inspired Mexican restaurant is set to open in Downtown Colorado Springs this spring. Chile Colorado owner Daniel Moreno hopes to open his first restaurant on Cinco de Mayo (May 5) inside the former Corner Café space at 7 E. Vermijo Ave.
He will not have to do much renovation on the space but plans to update the look to match the Chile Colorado aesthetic.
“We’re just very excited to serve the Downtown Colorado Springs area. I think it’s going to be a breath of fresh air, especially for Mexican food here in Colorado,” Moreno told What Now Denver. “They’re going to definitely get a true taste of what Colorado Mexican food is.”
The menu will feature Colorado-inspired homestyle food and Mexican food that is unique to the state and Colorado Springs. “We’ll have a lot of non-traditional Mexican food items. Our green chile is going to be pretty popular,” he stated.
“We’re going to specialize in breakfast burritos, to-go burritos throughout the day as well.” Chile Colorado will also feature a full bar.
Moreno is no stranger to the restaurant industry and has been passionate about food and cooking since his childhood. “I grew up in a very traditional, Hispanic family. Food is a main staple in our culture and our family. I just grew up loving to be in the kitchen,” Moreno shared.
Moreno’s grandparents, Ernest J. Tapia and Priscilla (Mestas) Tapia, owned Pris’ and Ernies and El Matador Mexican restaurants back in the 1960s and 70s. Moreno grew up learning how to cook. “It’s just something I’m truly, truly passionate about.”
