Suncoast Hotel and Casino announced the debut of William B’s Steakhouse. Formerly home to Salvatore’s Italian Restaurant, William B’s brings a refreshed and classically elegant steakhouse to Summerlin with a bustling bar scene, an inspiring menu with nods to Boyd Gaming’s co- founder and Chairman Emeritus William “Bill” Boyd and a modern yet inviting atmosphere.
Conveniently located inside the property’s main entrance, William B’s features 13-foot ceilings and two-toned walnut paneling. The new, 6,940-square-foot restaurant showcases a bar and lounge area upon entrance with book-matched stone wall panels and a bespoke, large scale wooden louvered façade. Overhead in the main dining room, the focal point becomes a custom, 20-foot-long contemporary Murano glass chandelier. The climate controlled 500 bottle, polished stainless steel wine display highlights the extensive wine collection and acts as a divider between the two dining rooms.
The cocktail lounge menu opens with an array of light bites and a Pan-Roasted Seafood “Tower Hour” from 4 to 5 p.m. featuring Maine lobster, king crab, gulf shrimp, Atlantic scallops, little neck clams, mussels and calamari. Libations, like the Stardust, a nod to the original home of William B’s Steakhouse before the casino implosion in 2006, or the Bonded Boulevard with Jack Daniel’s Tennessee Whiskey, are designed to complement the rich flavors of the cuisine. Curated dishes like the Braised Beef Short Ribs, Pacific Swordfish and Tomahawk Ribeye served with sauces and accompaniments add a touch of elegance and excitement to the overall dining experience.
To conclude the dining experience, a variety of after dinner coffees, libations and desserts, such as the classic Espresso Martini, Sticky Toffee Pudding with Tullamore dew Irish whisky sauce and vanilla bean ice cream or Banana Cream Pie, are available.

William B’s steakhouse will open at 5 p.m. Wednesday through Sunday with the last seating at 9 p.m. on Wednesday, Thursday and Sunday and 10 p.m. on Friday and Saturday.
