Founded by Bruce and Eric Bromberg in 1992, Blue Ribbon Restaurants now has almost twenty restaurants in cities like New York, Las Vegas, and Miami. One of their Las Vegas concepts—Blue Ribbon Sushi at Station Casinos’ Red Rock Casino Resort and Spa—is preparing to launch a new location, this time at Station’s Green Valley Ranch Resort Spa and Casino. The new location will open at the Henderson resort in early 2024.
The Green Valley Ranch location will seat 136 guests in a space featuring wood accents, booths, and a sushi bar. The menu will match that of the Red Rock location, offering appetizers like Spicy Cucumber Sunomono and Chicken Lettuce Wraps; Kitchen Specials like the Pork Belly Skewer, Oxtail Fried Rice, and Bucket O’ Wings with Chili Sauce & Wasabi Honey; a selection of signature rolls, sashimi, and nigiri choices; and entrees like Pan Seared Halibut, the Wagyu Burger, and Baked Stuffed Lobster.
Other Las Vegas restaurants from the Bromberg brothers have included Blue Ribbon Fired Chicken in Downtown Summerlin at the Grand Bazaar Shops—the first shuttered in 2018, the second in 2021.
