New Sushi Concept to Open in Melbourne

Nitro Sushi, a pub-style sushi eatery, will soon be coming to Melbourne, according to a recent filing with the State of Florida. The restaurant will be located at 7777 North Wickham Road, near Time Square Diner and Mi Jalisco. 

“I chose this location because I used to work at a nearby restaurant and I wanted to build a restaurant that would access the same customer base,” Owner Jaaziel Ruiz Rivera tells What Now Orlando.  

“I feel like every restaurant around here copies each other, doing the same thing over and over—I’ve been working in the area restaurant for 11 years and I wanted to do something different.” 

When asked about the menu, Rivera says “I do sushiritos, a kind of handheld sushi burrito, sushi donuts, and sushi burgers. Just something different that you can’t find around here.” 

Rivera adds that the name “Nitro Sushi”, is supposed to evoke a feeling of newness and excitement. 

“I was thinking of nitroglycerin, the main thing inside the dynamite, what makes it blow up. I want my food to be thought of as cool, new, and explosive.” 

Rivera hopes to open as soon as permitting processes are through.
