An application for a liquor license in mid-July was filed by Shay Gau, an owner of The Wandering Tortoise, for a new business across the street at 2322 E Indian School Road in a 1,900 square-foot space.
The filing — a series 012 Restaurant application — would allow Gau and his team “on-sale retail privileges” to “sell and serve spirituous liquor solely for consumption on the premises of an establishment which derives at least forty percent (40%) of its gross revenue from the sale of food,” according to the Arizona Department of Liquor website. A sketch of the location in the application shows an area for a kitchen, as well as an area for dining, which is in keeping with the requirement for the license type to sell food.
When What Now Phoenix reached out to Gau for further information, he confirmed the filing but hasn’t shared any other details just yet, saying it was early in the process. The application shows they’re hoping to be finished with construction by November 1, 2021.
If the incoming restaurant is anything like The Wandering Tortoise, though, we’re sure it’ll be a hit.
The Wandering Tortoise specializes in craft beer. According to their website, “The vision was simple: Create an amazing atmosphere with the best possible hospitality and curate the most amazing beverages that we can get our hands on.”
The beer shop and taproom offers 22 rotating beers on draft and showcases both local and national beers. Those who might not be the biggest on the brewskis also have quite a selection of wine to choose from.
