The new ownership plans to rename the restaurant Urban Agave

Urban Margarita, the family-owned Mexican restaurant in Gilbert at 6685 W Beardsley, Suite 180, is getting ready to rebrand under new ownership as Urban Agave.

Original Owners David Borrego and Kimberly Newhart created one of the best neighborhood restaurants. Now that they have survived the pandemic, they’ve decided to pass ownership to Sky Restaurant Concepts, led by Schuyler Estes. Sky Restaurant Concepts is the parent company of Squid Ink Sushi Bar and Highball Cocktail Bar, and now they are planning to rename this new venture to Urban Agave. The new version of this restaurant will have some new menu items and some of Urban Margarita’s favorites.

“Owning Urban Margarita has been one of the greatest joys of our lives. For the past five years, we have met incredible people and created long-lasting relationships in our community,” Borrego and Newhart said last month on social media. “We are grateful beyond words. We know Urban Margarita has been a “go-to” restaurant on Friday nights for happy hour, Sunday brunch, and more—in fact, we are delighted that our restaurant has evolved into a true “neighborhood spot.” That was a major goal for us from the day we opened our doors. After extensive reflection, we have decided to step back from restaurant ownership.”

There is no exact timeline as to when this new restaurant will open. Sky Restaurant Concepts plans to keep David working with the culinary staff for another month to help create new recipes as the team transitions. The new ownership also doesn’t plan on getting rid of the current staff. Considering the restaurant recently applied for a liquor license, it’s safe to say Sky Restaurant Concepts hopes to move into the new restaurant as soon as possible.

“Thank you again for five years of unwavering support,” the Facebook post continues. “It has been a privilege to get to know our neighbors and to serve you at Urban Margarita. We are very excited for our future and for the future of the restaurant as it transforms into Urban Agave. We will share more updates on the menu, new website, hours, etc., as soon as possible.”
