Guillaume’s Gourmet Bistro, a budding project in development, recently applied for a Louisiana business license. The application states the restaurant will be located in a strip mall at 1885 Rousseau St. A Chinese take-out restaurant named New China once resided at this location but recently closed.

Guillaume’s Gourmet Bistro project is likely being headed by executive chef Saul Williams and owner of Guillaume’s Gourmet Company, Kendra Jackson. When What Now NOLA reached out for further comment on the restaurant, the owner and chef were unavailable for comment. The business filing does mention the restaurant has a menu that will consist of “Louisiana style cuisine with soul food flare.”

Guillaume’s Gourmet Bistro’s business filing includes plans to convert the space into a full-service restaurant. In a Facebook post by PelPrint, the printing company posted menu designs for the new bistro. The sleek black design includes a crawfish logo with lists of entree dishes, pasta, and Po Boy menu items. A peek at the listed dishes includes a dish named “pasta Mardi Gras” with sauteed shrimp, chicken, andouille sausage, and spicy tomato sauce over penne pasta.

Guillaume’s Gourmet Bistro is scheduled to open the first week of September of this year. What Now NOLA will continue to update this story as it progresses.
