Ruby’s New York Style Bagels is launching its fourth location in Carolina Park

Ruby’s New York Style Bagels is planning its fourth location in northern Mount Pleasant’s Carolina Park development. The opening is scheduled for late February or early March, reports the Post and Courier.

Ruby’s serves breakfast and lunch with a full menu of bagels, spreads, sandwiches and coffee drinks. Their bagels have been recognized by multiple media outlets as the some of the best in Charleston.

Co-founded by Joe Harvey and Kevin Roach, along with their partners Denise and Gail, the team was determined to make authentic New York style bagels in Chucktown and follow an exact process to do so.

“We experimented with the dough, the fermentation process, the alkalinity of the water, and every other variable we could think of. And we succeeded in making great bagels using Mt Pleasant water…what was really important was using quality natural ingredients without harmful artificial additives,” states their website. ​

Kevin and Gail moved to Mount Pleasant in 2016. After Kevin’s bagel making became more than just a hobby, the pair partnered up with long-time friends Joe and Denise, who own several successful coffee shops throughout the Northeast, to open Ruby’s. 

Today, the bagel shop has three open locations in Mount Pleasant, North Charleston and West Ashley.
