The Italian restaurant that’s been serving up authentic mafaldines, agnolottis, tagliatelles and more pastas of all shapes, Restaurant Olivia, is going on a journey to Greece and taking their customers of Denver with them.

Who doesn’t want to pretend they’re in a restaurant on a beach in Greece, watching the sun set into the water as they dine on freshly caught seabass and side dishes made from all the delicious local produce Greece has to offer?

The restaurant will be going on a brief hiatus as it takes staff on a journey to Greece so that the whole team can come back with a bit more inspiration and re-invention. Post-trip: the restaurant will be hosting two very exclusive events that will help transport Denverites to Greece with them. The events will take place on July 25th and August 8th. The team behind Restaurant Olivia, co-owners Austin Carson, Ty Leon and Heather Morrison are at the helm of this transformation and we can’t wait to see the ways in which Restaurant Olivia will keep reinventing itself post-pandemic.

When What Now Denver talked with Heather Morrison, we were told that they plan to make these trips and dinners a yearly event. “Next year we’d like our group trip to be over to Italy,” said Heather Morrison. “We’re going to go someplace different each year,” that we can draw inspiration from.
