Clean Eatz is set to bring healthy, affordable meal options to Pueblo by the spring. According to The Pueblo Chieftain, the eatery will located at 201 South Union Avenue, near the redeveloped Riverwalk district.

Stephanie Burdick, the franchisee, told What Now Denver that the construction began in December, and the contractor CD Builders estimates a 90-day timeline, targeting an opening by late March. Hours are set to be 11 a.m. to 7 p.m. daily, and the business will employ 15 people.

The Pueblo location will feature a dine-in café menu with burgers, wraps, flatbreads, melts, build-your-own bowls, smoothies, and more. Weekly meal plan services with new menus will be uploaded online every Tuesday, for grab-and-go meals like cauliflower crust pizzas, snacks, and protein smoothies.

Burdick brings a wealth of entrepreneurial experience to Clean Eatz. For over a decade, she has owned Main Street Independent Insurance Agency. In addition, she operates PicMe!, a successful photobooth company, and holds real estate investments.

“The Clean Eatz mission statement is ‘We Change Livez’, and that is exactly what I aim to do in Pueblo,” she told What Now Denver.

Clean Eatz is a health-focused café and meal prep franchise founded in 2013 by Don and Evonne Varady. It provides a variety of nutritious and affordable options, catering to diverse dietary needs, including vegetarian, gluten-free, and keto-friendly preferences.
