Portillo’s has been teasing opening restaurants in the Colorado market for the past year or so, and now it seems the brand has another potential spot its working on. The company has filed plans to open at Denver Premium Outlets in Thornton, posts show.
The 6,250-square-foot restaurant will include a 500-square-foot outdoor dining area and dual drive-thru lanes. There will be 83 parking spaces and space for up to 30 vehicles in the two drive-thru lanes. Daily operating hours will be 10:30 AM to 10:30 PM, a letter of intent states.
Three potential sites in Colorado are currently under review, as What Now Denver has previously reported. Plans were filed for Littleton and Green Valley Ranch, but the status of those projects is unclear, and the business has declined to comment.
The popular Chicago-based restaurant chain was founded in 1963 by Dick Portillo in Villa Park, Illinois. It started as a small hot dog stand called The Dog House and has grown to have locations in multiple states, including Illinois, California, Indiana, Wisconsin, and Arizona.
