BOXBOX is heading to Cherry Creek for its next chapter, bringing its composed salads and signature bento boxes to a new neighborhood. The Denver fast-casual restaurant has signed a lease at 3003 E. 3rd Avenue, Suite B, where it plans to open in early 2027.

The 1,290-square-foot space will seat 12 guests, with an expanded menu planned for the new location. The move follows BOXBOX’s first year on East Colfax Avenue, as the restaurant looks to reach a new group of customers while staying true to its approach to fresh, flavorful food.

For co-founder Tim Martin, Cherry Creek is a natural next step for the business.

“Moving BOXBOX to Cherry Creek is a big step for us. Cherry Creek is such a vibrant and critical part of the city, and we feel so lucky to be able to share our food with the neighborhood among so many other great businesses, shops and restaurants,” Martin said. “We look forward to adding our food to the amazing variety that’s already here, connecting with old friends, making new friends and bringing our voice to the neighborhood.”

Martin founded BOXBOX with his wife, Laurie Martin. The couple met while earning graduate degrees in hospitality at Cornell University and bring experience across restaurants, food and beverage strategy, hotel operations and hospitality marketing.

Tim’s career has taken him to kitchens in Telluride, Hanoi and New York City, followed by consulting work with hospitality, restaurant and casino brands through Blau & Associates. He most recently served as senior director of food and beverage strategy at Vail Resorts. Laurie’s background includes hotel operations, luxury travel, marketing and events for José Andrés restaurants in Las Vegas, as well as brand partnerships at Inspirato.

For Laurie, the new neighborhood is already familiar territory.

“There’s so much energy in the neighborhood, and it’s somewhere we already find ourselves spending time as a family,” she said. “We’re thrilled to be in a place where people are working, walking, shopping and looking for the kind of fresh, flavorful food we love to make.”

Salads will remain at the heart of BOXBOX’s menu, with chicken, seasonal vegetables, pastas and grains prepared through techniques such as marinating, roasting and curing to build flavor and texture. The menu also includes a range of naturally gluten-free choices, while about a quarter of its offerings are vegan-friendly.

The restaurant also takes a different approach to pricing, with no upcharges, added fees or tipping. The price listed on the menu is the price customers pay.

BOXBOX plans to share more details about its expanded menu as the Cherry Creek opening approaches. The team is also planning community tastings and neighborhood events ahead of the launch.

Customers can sign up for opening announcements, early access and menu updates through the restaurant’s website.
