From smothered burritos and chilaquiles to birria tacos, Santos Café & Grill has built its name on Mexican comfort food in Denver. Now, the family-owned restaurant is preparing to bring its menu to Capitol Hill, taking over the former Syrup space at 410 E. 7th Avenue.

The new restaurant will mark the second full-service location for co-owners Ana Karen Santos and José Santos Jr., who operate the business alongside their family. According to BusinessDen, the restaurant is expected to open in November 2026.

Santos Café & Grill has operated its existing restaurant in Denver’s East Colfax neighborhood since 2020. The business has its roots in the family’s earlier food venture, when José Santos Jr. helped his parents sell burritos from a cart along the 16th Street Mall after they immigrated from Mexico. That early experience helped lay the groundwork for the restaurant the family operates today.

At Santos Café & Grill, breakfast is a major focus, with a menu that blends Mexican cooking traditions with familiar morning favourites. Diners can choose from egg and potato burritos, smothered burritos, chilaquiles, huevos rancheros and chorizo with eggs. The menu also includes lunch options such as enchiladas, fajitas, quesadillas, tortas and birria tacos.

The restaurant offers a range of drinks and sweet treats to round out the menu. Its coffee is brewed using beans imported from Mexico, while its dessert selection includes churros and ice cream. Santos Café & Grill also offers catering for gatherings and events.

The business describes itself as a family-run restaurant focused on fresh ingredients, customer service and maintaining strong ties to the community. Over the years, its menu has expanded beyond burritos and tacos to offer a broader selection of breakfast and lunch dishes.

The new location will occupy the former Syrup restaurant space at the corner of East 7th Avenue and Logan Street. Syrup operated there from 2022 until its closure in October 2026, according to the media outlet.

With the Capitol Hill expansion, Santos Café & Grill will bring its established menu to another Denver neighbourhood while continuing to build on the family’s long-running connection to the local food scene.
