Wood-fired cooking and family recipes are at the heart of Sierra Restaurant, which is preparing to bring its American and Southwestern menu to Colorado Springs with a second location in the city’s Northgate area.

Construction is underway at 130 Spectrum Loop in Polaris Pointe, a commercial development near Ford Amphitheater and Texas de Brazil. The project marks an expansion for Brinkerhoff Hospitality, the Denver-based restaurant group behind Sierra, with the new location targeting a late-2027 opening.

The planned restaurant will occupy a 9,000-square-foot building on a two-acre site. Its design will include an open kitchen, giving diners a view of the cooking, along with a large outdoor patio planned to take advantage of the surrounding mountain scenery. Large windows, custom furnishings and distinctive brickwork will also help shape the space.

Sierra first opened in December 2017 in the RidgeGate community of Lone Tree. The restaurant’s menu brings together American grill classics and Southwestern influences, with recipes passed down through the Brinkerhoff family.

At the Lone Tree location, guests can order wood-fired dishes such as rotisserie chicken, Texas ribeye and baby back ribs. The menu also includes crispy chile rellenos, Louisiana-style shrimp, halibut tacos, burgers and other grill favorites, alongside appetizers, salads, sides and desserts.

The Colorado Springs restaurant is expected to carry that mix of American and Southwestern cooking into its new setting. Details about the final menu have not yet been announced, so it remains to be seen whether the new location will introduce any dishes exclusive to Colorado Springs.

Polaris Pointe puts the restaurant among a growing collection of dining, shopping and entertainment destinations in the Northgate area. Its proximity to Ford Amphitheater also places it near a major venue for live music and events, while the surrounding development includes businesses such as Topgolf and Texas de Brazil.

For Brinkerhoff Hospitality, the project brings Sierra beyond Lone Tree and into Colorado Springs. Construction is continuing, with the restaurant aiming to welcome its first guests in late 2027. For more information about the existing restaurant, visit Sierra Restaurant’s website.
