While it may not be fully hatched yet, DFW diners can safely count a fresh new concept that reimagines fast-casual chicken as a welcome addition to the local restaurant scene. Franchisee Mark Blessing is opening a new location of Chicken Salad Chick, an up-and-coming chain, in Granbury, according to paperwork filed with the Texas Department of Licensing and Regulation.

The concept will be bringing its unique cuisine to 1440 East US Highway 377, a storefront space that has previously housed Movies N Video and the Bella Rosa Consignment Gallery. The TDLR paperwork states that renovations on the 3,587 square foot space are set to commence on May 5 of this year and should be completed by July 7, 2025. An opening date is not presently available, however this construction timeline suggests that Granbury locals could be enjoying Chicken Salad Chick’s fare by late summer or early fall.

The Granbury eatery is in good and experienced hands; Blessing has a long history of managing franchises. The entrepreneur has spent 20 years owning and operating a collection of Great Clips locations. He is signed on to open 3 Chicken Salad Chick storefronts; one in Stephenville and another in Abilene, alongside the Granbury space.

Founded in 2008, Chicken Salad Chick is still a relative newcomer to the fast-casual scene. As the name suggests, the chain specializes in chicken salad-twelve varieties, to be precise-made fresh daily. The restaurant strives to provide personal care and attention to every customer alongside its delicious fare. Its motto is simple: “it’s all about bringing people together, one scoop at a time.”
