Springbone Kitchen Showing Signs of Life on M Street

The New York chain has permits posted in the window of Roti’s old home.

An up and coming New York chain is getting ready to take the DMV by storm. Springbone Kitchen-a concept that emphasises healthier, natural options-has permits in place for its second DC home which will be opening on M Street, reports local media outlet PoPville.

The restaurant will be greeting guests at 1850 M Street, NW in the storefront that last housed Roti. According to the permit displayed in the shop’s window, the space will be undergoing several renovations before opening its doors to hungry District residents. Work listed includes: “expand kitchen and prep space, remove existing finishes, and install seating and finishes per new restaurant brand. Upgrades to mechanical, electrical, plumbing systems to accommodate the new layout.” Springbone Kitchen will ultimately have 2,811 square feet of space to serve its future regulars in.

Springbone Kitchen is also opening a Georgetown location. Precise opening timelines are not yet available for either storefront. 

Already a hit in New York, the chain has rapidly made a name for itself. Founded in 2016, the eatery has earned an ardent fan-following through its commitment to bringing care and quality to fast-casual dining. The website explains: “At Springbone we believe in the power of real food. That means minimal grain and sugar, more vegetables and better meat. No processed foods, refined sugar or seed oils, ever. We are also 100% gluten-free.”
