Ahuevo Cafe, a new Mexican restaurant, is set to debut in Tolleson at 9205 W. Van Buren Street.
The new restaurant concept is taking over the former home of Maskadores Taco Shop. Co-owner Juan Soberanes shared with What Now Phoenix that Ahuevo Cafe aims to open its doors sometime in early to mid-August 2025. Soberanes tells What Now Phoenix that Ahuevo Cafe is a passion project years in the making and one that represents a new chapter for his family’s long-standing presence in the restaurant industry. “We’re a local, family-owned mom and pop, and while we’ve been in the business since 1979, this is our first time stepping outside of our usual fast casual concept.”
That experience primarily comes from Armando Ruiz and his wife, Marisol, who have been in the restaurant industry for decades and bring a wealth of knowledge to the new venture. With Ahuevo Cafe, the vision is to create a trendy brunch destination that brings something fresh to the area. This menu fuses classic American brunch staples with authentic Mexican flavors, featuring highlights such as pancakes, Conchita French toast, and a range of traditional dishes. “We’re shooting for a true Mexican American fusion,” Soberanes adds.
This location makes a lot of sense for a new restaurant. Van Buren Street experiences a steady stream of both cars and foot traffic, providing Ahuevo Cafe with excellent visibility. It is also surrounded by neighborhoods, schools, and local businesses, perfect for attracting a mix of lunch crowds, families, and after-work diners.
Tolleson itself has been experiencing rapid growth, with more people moving in and new businesses emerging constantly. The area is ready for fresh dining options, and Ahuevo Cafe is arriving at just the right moment. With a familiar location and a new twist on Mexican cuisine, it has a solid chance of becoming a go-to spot in the community.
