A new bakery is ready to bring a taste of Europe to Matthews. Innescas Bakery is targeting a late summer opening at 215 North Ames Street in Matthews, where Carolina Beer Temple owner Rob Jacik opened the Ames Street Marketplace earlier this year.

Innescas Bakery co-owner Abigail Borisik told What Now Charlotte that they will be taking over a 1,100-square-foot unit, with plans to open a European-French style bakery that will serve desserts, pastries and handcrafted coffee and tea beverages.

“We just always liked Matthews area with all the shopping and the activities you can do there,” Borisik said. “We knew it was a city that would just keep growing and that it would be good for us to get foot traffic.”

Borisik and her business partner want to place emphasis on authenticity, bringing the flavors of Europe to the streets of Matthews.

“We’re just trying to get that European dessert into Matthews so people know what an actual European dessert tastes like,” Borisik said. “We just know that it’s going to be the perfect touch for Matthews.”

The European-style desserts will be baked in-house, with offerings like cakes, tarts and macarons. The space will offer both indoor and outdoor seating.

As of now, the team does not have an exact opening date. They are aiming for August, but the opening timeline is dependent on construction progress.

“We’re excited and ready for this to be open,” Borisik said. “This started off as my partner’s dream and she said she wanted to get a brick-and-mortar in Matthews. This was her childhood dream and it’s finally coming to life.”
