Scoop N Scootery is preparing to expand its late-night ice cream delivery concept into University City, with a new location at 9605 N. Tryon St., Charlotte, targeting a February 2027 opening. Franchise owner Patrick Knorring, who holds the Scoop N Scootery franchise license for the Charlotte-Mecklenburg metro area, confirmed the timeline with WhatNow Charlotte. Axios Charlotte also reported the upcoming location on Instagram, noting that construction is expected to begin soon.
Knorring said the decision to expand into University City reflects both his longer-term ambitions for the business and its existing customer base. “I was always planning on opening multiple locations,” he told WhatNow Charlotte, explaining that many of the shop’s customers are college students. With the new location directly across the street from the university, he said, “the opportunity to be right across the street from the university was too good to pass up on.”
The owner expects the build-out to be relatively straightforward because the space previously housed a boba tea shop. Knorring said his architect’s plans were scheduled for review on November 3, with Danforth contractors expected to begin work in December, although the holiday period could affect the schedule. February remains the target opening month.
The University City shop will bring the same oversized sundaes and delivery-focused service offered at the brand’s existing Charlotte location on Thrift Road. According to Scoop N Scootery’s official website, the concept specializes in ice cream sundaes, frozen yogurt, milkshakes and customizable creations, with late-night delivery available until 2 a.m. The brand’s Charlotte ordering options also include delivery through third-party platforms and pickup.
However, Knorring’s ambitions for the new location extend beyond convenience. He said he was excited about “unlocking a new part of the city.” He explained that customers have been traveling from places such as Concord and other parts of University City to get ice cream from the Thrift Road shop. The new location, he said, will make the business more accessible to those existing customers while introducing its offerings to a new audience of students and nearby residents.
“I’m really excited to get a whole new audience of both students and neighbors in that area,” Knorring told WhatNow Charlotte, adding that he looks forward to sharing both the ice cream and the delivery concept with the community.
The University City opening is also part of a broader expansion strategy. Knorring told WhatNow Charlotte he intends to open four stores across the Charlotte metro over the next couple of years, establishing a wider local footprint for the franchise.
