The team behind Saigon Drip Cafe is expanding to Seattle’s Rainier Square neighborhood with a new concept.

Building on the cafe’s success, Saigon Drip Alley is set to open in winter 2025 in Skinner Hall.

“Prepare to be transported to the vibrant streets of Saigon, flavor & all! Our ambiance is a delightful blend of modern and traditional Vietnamese charm. You’ll be captivated by the alluring aromas of freshly brewed Vietnamese coffee, mouthwatering Banh Mi and delectable noodle dishes that have garnered praise from all corners of the city,” the restaurant’s website reads.

Coffee is a cornerstone of the new cafe, especially for enthusiasts. The menu includes traditional Vietnamese drip coffee and signature iced coffee. The Banh Mi features a choice of protein on a toasted baguette with creamy pâté, mayo and soy sauce, topped with pickled carrots and daikon, cucumbers and cilantro.

“At Saigon Drip Alley, we believe that great food is best enjoyed with great company. We can’t wait to welcome both longtime fans and new guests into our vibrant new space to continue sharing the flavors and spirit of Vietnam with Seattle,” the website said.

While an exact opening date has not yet been announced, visit the Saigon Drip Alley website and follow the restaurant on Instagram for updates.

What Now Seattle reached out to the team, however, they have not yet responded. This article may be updated.
