Teeing off a new dining experience, Trailhead Golf Course in Liberty Lake will welcome a fresh restaurant concept.
Father-daughter team Tony and Vanessa Orozco, owners of Casey’s Place and Las Chaveles, are launching Chavelitas Pub Grill and Cantina, a concept blending the best of their two restaurants into one.
“We’re going to be on a golf course so I wanted to have sandwiches that are easy for golfers to pick-up either through the walk up window or come in and have a seat,” Vanessa told What Now Seattle. “Then with Mexican food, I feel like it is turning into kind of a new normal. Mexican food is always good and people typically like it.”
The Chavelitas menu will feature favorites from both Casey’s Place and Las Chaveles, along with exciting new dishes.
Guests can expect a variety of sandwiches, fresh salads, homemade soups, fusion creations and classic Mexican favorites. Highlights include the Sonoran hot dog, a bacon-wrapped twist on the traditional Mexican hot dog topped with queso, onions, sautéed bell peppers and cotija cheese. Another must-try is the loaded fries, a playful take on nachos packed with bold flavors.
“We created menu items that aren’t on any other menus that are locally around,” she said. “That kind of sets us apart with some different items you can’t find at the restaurants down the street.”
The drink menu fuses Mexican and American flavors for a unique and refreshing experience.
“We have a bar manager and she created a really beautiful cocktail menu with craft cocktails,” Vanessa said. “A lot of people don’t know what Mezcal is or they might not like it because they think it’s smoky. We tried to pick drinks that would complement those flavors to where it’s like, ‘Oh, yeah! I’ve had Mezcal. It’s pretty good.’”
The design of Chavelitas is crafted by Orlando Orozco, son and brother of the owners.
“It’s a really fun, pretty, vibrant restaurant,” Vanessa said. “The color scheme is pink, yellow, green and blue. It’s very Palm Springs–airy and modern. It’s different for the area.”
The interior can accommodate up to 90 guests, including the bar and lounge area, while the outdoor patio features 20 tables, each seating up to four.
Although an official opening date hasn’t been announced, the Chavelitas Pub Grill and Cantina team aims to debut in late September or early October.
