Inspectors cited 11 violations during the routine inspection. The inspector detailed the findings in the official report.
Employees at China Wok were rinsing their hands at the 3-compartment sink and then cooking chicken without cleaning them again. Unlabeled food items that were prepared on Sunday were kept inside the walk-in refrigerator, low-reach-in refrigerator, and Coca-Cola cooler.
China Wok was reported for having two chemical spray Raid bottles on the steps that lead to the back freezer. The freezer at the Nashville establishment was malfunctioning, resulting in pooled water inside it. Thawed food items measured between 32-38°F with the freezer temperature being 5°F.
Food containers and boxes were stored on the floor in the walk-in freezer. A knife was found stored between the equipment at the Chinese food facility. Tong handles were touching noodles directly on the cold top. Single-use cups without handles were being used to scoop rice and other bulk dry ingredients.
Egg cartons throughout the back of the Nashville establishment were being used as oil drainage catchers. The cold top at China Wok had food debris along with grease buildup on the hood filters. The most current health permit and a ‘No Smoking’ sign were missing at the Chinese food facility.
