EntreNos, the Michelin-starred restaurant concept from chefs Evan Burgess and Osmel Gonzalez finished an exceptionally long pop-up run this summer. It was a bittersweet moment for what was originally intended as a short-term project but ultimately became a lasting sensation.

“What started as a short-term pop-up turned into something far more meaningful than we ever expected. We never planned to last this long but the support, dedication, and love we received made it impossible to walk away,” said a post published by EntreNos on Instagram back in May. “We’re deeply grateful for every hand that shaped this journey—our team, our community, our producers, and every guest who let us share a piece of our story on their plate.”

EntreNos closed on July 1, leaving many to wonder what would follow from the concept’s chefs. Now, signs point to chef Osmel Gonzalez being at work on a brand new restaurant concept.

Plan review paperwork has been submitted by Nos Hospitality LLC for a new restaurant called Emelina, which would open at 424 Park Pl, Suite 101 in West Palm Beach. Behind Nos Hospitality LLC are Osmel Gonzalez and Camila Salazar. Gonzalez and Salazar previously collaborated at SingleThread.

What Now confirmed news of the opening with Salazar on Thursday. Salazar declined to comment on the upcoming restaurant for the time being, however; we’re waiting on an update once the details are ready to share.
