Coral Gables is set to welcome two new dining concepts next year.
The THesis Hotel will introduce Katsuya, a renowned Japanese restaurant, and a yet-to-be-named Mediterranean concept through a partnership with developer Nolan Reynolds International.
“We built THesis to be more than a hotel. We wanted it to be a gathering place for Coral Gables, and for more than six years, this community has made it one. This partnership is the next chapter of that vision,” said Brent Reynolds, CEO of Nolan Reynolds International, in a statement.
Katsuya
Katsuya, operated by Sam Nazarian of SBE Entertainment Group, is the group’s premier restaurant concept.
“Coral Gables is home. My family and I live here, we eat here and we celebrate here, so bringing Katsuya to my own community is personal,” Nazarian said in a statement.
The restaurant specializes in Japanese cuisine, featuring sushi and robata, a traditional Japanese cooking technique in which skewered seafood, meat, poultry and vegetables are grilled over hot charcoal.
Standout dishes include crispy rice topped with spicy tuna and jalapeño, miso black cod marinated in sweet miso and broiled until caramelized, and robata-grilled chicken.
Katsuya also features a creative cocktail program, including the “Burning Mandarin,” a spicy twist on the classic cosmopolitan.
Mediterranean Concept
The new Mediterranean concept will be led by Fabio Trabocchi.
The opening marks Trabocchi’s return to Coral Gables after launching Fiola in the city in 2018 and operating it through 2025.
“Fabio already has a meaningful relationship with the people here. We have an opportunity to build something that genuinely belongs to Coral Gables,” Nazarian said in a statement.
Instead of revisiting the former concept, Trabocchi will introduce a new restaurant with a distinct culinary identity tailored to THesis and the surrounding community. The restaurant’s name, design and menu will be announced ahead of its planned opening.
What Else Is Coming to THesis Hotel?
SBE Entertainment Group has also taken over operations for all food and beverage offerings and events at THesis, including Mamey, The Collab and Ivy Rooftop, bringing its expertise in restaurants, nightlife and hospitality to the property.
“We want THesis to become part of people’s lives. Dinner on a Tuesday. Drinks on the rooftop on Friday. A business dinner, a graduation, a birthday or a wedding weekend. Katsuya, Fabio and Ivy Rooftop each bring something different, but together they can make this one of those places you keep coming back to,” Nazarian said in a statement.
Katsuya and Trabocchi’s Mediterranean concept will both open in the first half of 2027. Stay tuned!
