Memphis late night dining may soon be getting a little bit sweeter. Insomnia Cookies, the Philly-based chain that specializes in the titular treat, appears to be making plans to pursue a third area location, reports Daily Memphian.
Should the bakery’s plans come to fruition, Memphis residents will be able to satisfy their sweet cravings at 7444 Winchester Road as part of the Polo Shops. The commercial alteration permit Insomnia Cookies has filed with the Memphis and Shelby County Division of Planning and Development shows that the chain is hoping to refurbish and occupy a 1,330 square foot storefront.
Insomnia is still in the early stages of its potential third regional storefront; the paperwork was only filed on November 14 of this year and is currently “in review”.
Locals unfamiliar with Insomnia Cookies are in for a treat. The concept began as a means of satisfying the late night hunger University of Pennsylvania students suffered while studying. The chain’s popularity quickly outgrew its academic audience; what started as a study aid in 2003 quickly turned into a sensation. The company now has more than 350 locations open worldwide.
