Local Jersey Mike’s Franchisee Plans New Location

It’s the third location for franchisee Mike Cullen

Jersey Mike’s Subs is the definition of a household name. There’s a good chance you already have a favorite Jersey Mike’s order: maybe you too favor the Jersey Shore’s Favorite, #2, with provolone, ham, and cappacuollo; or maybe you’re more inclined toward #14, The Veggie (Swiss, provolone & green bell peppers). For franchisee Mike Cullen—and, as it happens, for this writer too—you have to go with #13, the Original Italian: provolone, ham, prosciuttini, cappacuolo, salami, and pepperoni.

“About 22 years ago, my brother and sister-in-law opened the first Jersey Mike’s in Austin,” Cullen told What Now on Tuesday, describing his journey with the Jersey Mike’s brand. “I started working with them part-time, and when they opened a second store, I went full time. After about 10 years, my wife said, ‘You know, we can probably do this.’”

And that’s exactly what happened. The long-time Jersey Miker has opened two Jersey Mike’s Subs locations is now preparing to launch a third.

“We opened the one off Anderson lane in 2013, and then the one in Dripping Springs in 2018,” Cullen said.

For this third location, the new Jersey Mike’s is headed to Shady Hollow Shopping Center.

“It’s going to have about 21 seats inside, and I think we’re going to try to do outdoor tables,” Cullen said. “This one is the closest to our home, so we’re excited about that. At the national conference last year, we said our goal is to be in every neighborhood, and I started thinking to myself, I want the one in my neighborhood to be mine! And really I don’t know what took me so long. We’re so excited to open and have our neighbors there at our store.”

According to documents submitted to the Texas Department of Licensing and Regulation, construction is expected to run from April 1 to August 3.
