Monday’s, a new neighborhood bar concept, is preparing to open at 805 16th Street in San Diego.
The company’s new location will move into the former home of Bottle Rocket Bar and Grill in East Village, which announced it would permanently close in late October after operating there since 2019. The new concept is owned by Cody Cox, Shaun Oertwig, and Phil Panek, according to a recent liquor license application. Social media activity indicates the team is in the final stages of construction and likely in the inspection phase, although an exact launch date has not been announced. Based on current progress, a Spring 2026 opening appears likely.
Bottle Rocket Bar and Grill, which replaced Monkey Paw Pub and Brewery, opened in 2019 and operates as a tavern-style destination in the heart of East Village. In a video posted to Instagram, co-owner Elias Delgado confirmed the closure, citing lease challenges and other factors. The transition marks another shift for the prominent corner location, which has housed multiple bar concepts over the past decade.
Monday’s has described itself online as an East Village neighborhood dive, signaling a more casual, bar-focused atmosphere. While details about the menu and beverage program have not yet been shared, the liquor license filing confirms plans to serve alcoholic beverages.
This will be an excellent landing spot for the new concept, given its high-visibility location just off the freeway and steps from Market Street. The address is also near other social destinations, including Punch Bowl Social, putting it in one of Downtown San Diego’s busiest nightlife corridors.
