Dos Gatos Kolache Bakery Plans San Marcos Expansion

Though the planned opening has been confirmed, it’s impossible to project an opening date yet

Founded by Seth and Chase Katz in 2009, Dos Gatos Kolache Bakery has grown to encompass three locations in San Marcos and New Braunfels, serving up Czech- and Texan-style Kolaches. Now, a TDLR filing shows a new Dos Gatos in the works in San Marcos, at 1104 I-35 N Frontage Road.

What Now confirmed the news of a planned opening with Chase Katz on Thursday. Katz said the planned location will feature a drive-thru and dine-in seating space but stressed that, in this permitting stage, it’s impossible to project any opening date yet.

If you’re not familiar, kolaches are yeasted pastries of Czech origin that are traditionally served filled with fruit, but in Texas, they have taken on a life of their own. The “Texas Kolaches” portion of the Dos Gatos menu features fillings like Bacon & Cheese, Jalapeno Polish Sausage, Pepperoni & Swiss, and Breakfast Sausage with Egg & Cheese.

On the more traditional side, Dos Gatos’s Czech Kolaches come filled with Apple & Cream, Apricot, Prune, Cream Cheese, and lots more.

“With a product that is second to none, and two locations close to the Texas State University campus, it is easy to make Dos Gatos a part of your daily routine,” says the Dos Gatos website.
