Rosetta, an Italian-inspired steakhouse from Toronto chef Grant Van Gameren, is getting ready to open in Picton at 279 Main Street.

The restaurant is expected to open in the former home of Hank’s Lonesome by early April 2026, according to BlogTO. The new location will introduce locals to Rosetta’s approachable, hospitality-first dining, featuring delicious, scratch-made food, an exciting cocktail program, and a lively atmosphere with good music and lighting. Van Gameren is partnering with Luke Haines, formerly of Martine’s Wine Bar and Bar Raval, and Jesse Fader, a Toronto expat now based in Prince Edward County, to run the kitchen and front-of-house operations.

Grant van Gameren is a well-known Toronto chef who has worked at Bar Raval, Martine’s Wine Bar, El Rey Mezcal Bar, and Harry’s Charbroiled. He has a history of creating approachable, well-designed restaurants that balance high-quality food with a welcoming, casual vibe. Rosetta represents his first restaurant venture in Prince Edward County, bringing his experience and style to a region known for its strong year-round culinary scene.

The Picton location will offer a versatile dining experience, aiming to sustain energy year-round rather than focusing solely on the summer season. While summer lunches may be part of the concept, the restaurant plans to maintain a vibrant atmosphere year-round. The team will emphasize attentive service, high-quality ingredients, and an intimate kitchen environment that enables precise, scratch-made dishes.

Rosetta’s menu will focus on Italian-inspired steaks and dishes, complemented by a thoughtfully curated cocktail program and music that supports a welcoming, energetic dining environment. Customers can expect approachable, flavorful meals paired with strong hospitality and attention to detail in both food and service.

“Our vibe will be delicious, approachable food, an exciting cocktail program, good music, good lighting, cool design, hospitality first service…perhaps some lunches in the summer but definitely some good energy all year long,” Van Gameren shared on Instagram.
