Novel Ice Cream, the Arizona-born ice cream company, is opening a new Peoria shop.

The news was posted in an Instagram reel which noted that the shop would be opening in Old Town Peoria. In the reel, owner Shawn Allard adds that construction has started on the Jefferson House, a multi-use center that will house Novel, along with a host of other restaurants and shops. Allard adds that this is a full-circle moment, since the new location is directly across the street from where Novel Ice Cream once operated its Peoria pop-up. The ice cream entrepreneur also noted that Novel fans have been requesting the shop to regain a Peoria presence. The shop is expected to open fall 2026.

Ranked number one in Yelp’s2025 list of the 100 Best Ice Cream Shops in the U.S., Novel Ice Cream offers small-batch, handcrafted ice creams in eight core flavors (Bourbon Toffee Caramel Crunch, Cookie Monster, Madagascar Vanilla, Chocolate, Straight Up Strawberry, Butter Pecan, Honey Lavender, and PB Wasted), along with four rotating flavors — each uniquely designed by a team of dedicated ice cream chefs.
