Restaurant Institute Founder to Open New Oyster Bar in Cleveland Heights

Award-winning chef Brandon Chrostowski continues to give back to Northeast Ohio.

A change-maker in Northeast Ohio is bringing a seafood addition and culinary classroom to the Cedar-Fairmount area.

A new oyster bar from Edwins Leadership & Restaurant Institute is on the way to the neighborhood at 12395 Cedar Road, from recent reports. C L Barber Salon is currently at the address, and it will be under construction in the coming months. Owner of the restaurant institute Brandon Chrostowski is heading the project, and he told What Now Columbus he is aiming to debut the bar in the summer or early fall.

Chrostowski founded Edwins in 2007, with the goal of helping former prison inmates reintegrate into society by providing jobs in hospitality. He has worked in restaurants in Detroit, Chicago and New York City, notably at James Beard award-winning Chanterelle. Now, he runs the restaurant institute at 12383 Cedar Road, serving French cuisine and other upscale dishes.

For the new concept, Chrostowski had a raw bar serving seafood at Edwins, and he wanted to create a larger space specifically for seafood. This will include shucked oysters and clams. Chrostowski said the cuisine will be “things classic to raw bars in France.”

“It’s been in my head for about a year,” Chrostowski said. He also manages Edwins Cigar Bar in Cleveland Heights and his Bakery and Training Center in Buckeye-Shaker.

Chrostowski’s new classroom space will be the first phase of construction, followed by the new raw bar. The raw bar is to be 12 seats, and the space is just 900 square feet.

The hair salon space is near the intersection of Euclid Heights Boulevard, next to a Chipotle location. This side of the road is home to other bars and restaurants including Zhug, Vero Pizza Napoletana and Parnell’s Pub.
