Sushi by Bou is more than an omakase dimmer – it’s an experiential evening out that marries showmanship and fine dining together. Now, Arizonans will be able to experience Sushi by Bou when it opens at the Westin Tempe Hotel, located at 11 East 7th Street.
The restaurant has announced the new location on its website, along with “coming soon – May 2026” as the opening timeline. The growing chain also mentioned that it would be opening an additional New York City location at the FiDi Hotel in Lower Manhattan.
Sushi by Bou was created by chef David Bouhadana and SimpleVenue as a sushi speakeasy at the 32/32 Hotel in New York City. The restaurant expanded to Miami Beach, opening at the former Versace Mansion — an elegant setting for an evening’s worth of upscale sushi, cocktails, and theatrics. Now, there are about 20 locations of the brand that seeks to elevate the dining experience through food and exploration.
Sushi by Bou offers omakase experiences in a speakeasy setting — with most evenings starting at an exclusive lounge for a welcome cocktail before diners move on to their dinner. 12 to 17 course experiences feature fresh seafood and ultra-luxe ingredients, with diners opting to add on signature hand rolls or alcohol-infused ice creams. Sushi by Bou’s menus is complemented by inventive cocktails with intriguing names like the “Lost in Tokyo” with rum, coconut milk, pandan, and matcha; and the “Sake to Me” with sake, Aperol, lime, and pineapple.
