As brands like Buc-ee’s and Casey’s grow around the country, the combination of gas station, convenience store, and fast food restaurant seems more and more like a magic formula. And as it continues to expand its footprint in the South, the Savannah-based Parker’s Kitchen is proving, as well, that it is.
This week, in an article called “Parker’s Kitchen closer to bringing its grits to Baymeadows,” the Jacksonville Daily Record reported that permits are currently under review for a new Parker’s Kitchen that would bring together two lots that previously housed a KFC and Tux Car Wash.
It’s part of a large growth push into new markets that, the Daily Record coverage says, “include Jacksonville and Columbia, South Carolina,” with “plans to open 17 stores in 2026.”
“The ParkersKitchen.com menu includes biscuits baked daily on-site, catfish, grits, hash browns, sausage patties and gravy, chicken tenders, pork chops, pulled pork sandwiches, fried okra, breakfast burritos, lemonade and ‘Signature Chewy Ice,” writes the Daily Record. “Parker’s Kitchen says it serves ‘world-famous hand-breaded Southern Fried Chicken Tenders as well as made-from-scratch mac ‘n’ cheese, a breakfast bar and daily specials.’”
Opening in the Baymeadows Road location, Parker’s Kitchen would be situated among hotels like Studio 6 Extended Stay and the currently close Hawthorn Suites by Wyndham, near restaurants like Wawa, Mikata Buffet, and Karma Indian Restaurant.
