‘Assembly’ Restaurant From Saddleback BBQ Owner Coming to Mason

As Risen Breakfast & Bakery closes, a new concept is replacing it.

A central Michigan restaurant group has plans for a new dining destination.

A new concept called Assembly is on the way to 402 S Jefferson Street in downtown Mason. This is the newest restaurant from the owner of Saddleback Restaurant Group, Matt Gillett, based in Lansing. Gillett is aiming to debut Assembly in July or August.

Saddleback Restaurant Group manages concepts like Slice by Saddleback, Coach’s Pub & Grill, and of course Saddleback BBQ with locations in Lansing and Okemos. The first Saddleback in REO Town opened in 2015, and Gillett has been expanding the brand ever since.

A menu is set to be released in June, and is being crafted by chef Jacob Welch of Grand Rapids. Welch and Gillet wanted to create a space that honors the history of Mason which is highlighted by one of the first automotive assembly lines.
Items will include burgers, steak frites, fish and chips and a cocktail menu.

“Assembly will be a small restaurant, about fifty-five seats, with a bar and dining room meant to feel warm, comfortable, and well run. A place for a weeknight dinner, a night out, or a meal you know you can count on,” says the description on Assembly’s website.

The space is at the corner of W Michigan 36 and S Jefferson Street. It shares the building with Kean’s greeting card shop, and is on the same side of the street as BAD Brewing Company. The Vault Deli is directly across the street.
