Community-Favorite Fort Collins Bakery and Pie Truck to Close Its Doors

Fort Collins bakery Sunny Sky Pies is preparing to permanently close its shop and truck. The community favorite bakery and truck will serve its last customers next weekend.

Sunny Sky Pies Set to Close Next Weekend

Located at 446 S. Link Lane in Fort Collins, Colorado, Sunny Sky Pies is an allergy-friendly and gluten-free bakery. The bakery specializes in handmade pies made with locally sourced organic fruit. The menu includes handmade sweet pies and other sweet and savory treats.

After 5 years of service, Sunny Sky Pies’ physical location and truck services will both be closing on October 10. On the official website, the bakery noted, “This week 9/30-10/3 is the last week to order whole pies. Next week we will only be selling slices.”

In a Facebook post, she wrote that continuing the business would mean giving up what made it special. That included personal customer relationships, fresh local produce, unique pies, and hand-rolled butter crusts. She said she was not willing to compromise on those values.

She added, “Building community has been my passion, and we created a shop and truck where people could come enjoy pie, feel seen & heard, but most of all valued.”

About the Bakery

Founded by Erin Margenau, Sunny Sky Pies began its journey as a simple home-based business, then transformed into a mobile pie shop. According to the Coloradoan news report, after the success of the mobile pie truck, the owner opened the brick-and-mortar storefront in the Link Lane neighborhood in 2023.

The bakery aims to provide high-quality, comfort-focused baked goods that are prepared with 100% organic ingredients. The bakery offers gluten-free and other allergy-friendly options, as well as vegan selections. The menu also includes vegan options.

In the closing post, the team thanked the customers and wrote, “To all my pie peeps, thank you from the absolute bottom of my heart. I am unendingly grateful for your support and love over the years.”

Sunny Sky Pies is an integral part of the Fort Collins community. The bakery will be fondly remembered for its unique and handmade pies and its warmth.
