Hey Bagel plans to open its second Seattle location on California Avenue in West Seattle in May 2027, founder Andrew Rubinstein announced on social media. The company has signed a lease for a storefront just north of Alaska Junction.
An exact address and opening date have not been announced.
Rubinstein said the activity along California Avenue made the area an easy choice for the business.
“West Seattle has its own strong community and being able to be a part of that is just a lucky break,” Rubinstein told What Now Seattle.
Hey Bagel opened its first permanent shop at 4610 Village Court NE in University Village in January 2025. The shop bakes bagels and bialys throughout the day and serves them hot with schmear.
The sourdough-based bagels use organic flour, half of which comes from Washington. The dough contains no dairy or eggs, making every variety vegan unless cheese is added.
The team does not plan to change the menu for West Seattle and will continue baking fresh bagels and bialys throughout the day.
Operating hours may be the primary difference between the two shops. Rubinstein said the West Seattle location is expected to close by 3 p.m., while the University Village store is currently open until 6 p.m.
The expansion follows national recognition for Hey Bagel. The shop won both Best Bagel and Best Bagel – Sourdough at the inaugural BagelFest West in 2026.
Rubinstein also said he remains interested in opening an Eastside location but has not yet found the right property.
