Shoppers at the Outlets at Castle Rock will soon have another stop to add to their visit when a pizza craving strikes. Peak Pizza, owned by Allen and Katie Hoover, is preparing to open at the shopping center, giving visitors a new spot to grab a slice while browsing the stores.
The pizzeria will be located in Suite 660 at 5050 Factory Shops Blvd. and is described as a locally owned and operated business. The Outlets at Castle Rock has listed Peak Pizza as a coming-soon tenant, with the grand-opening date still to be announced.
Peak Pizza is planning a New York-style, fast-casual concept, with pizza at the center of the menu. The offering is expected to include slices from a rotating selection of whole pies, as well as strombolis, pasta and salads. Soft-serve ice cream is also planned, giving customers another option to finish off their meal.
The restaurant will have indoor seating for about 50 guests, along with to-go ordering for customers looking to pick up food during a shopping trip. An arcade is also part of the concept, with the owners inviting community members to share suggestions for games they would like to see in the space.
The Hoovers already have ties to the shopping center, where they operate Auntie Anne’s and Cinnabon. They also previously ran Villa Pizza at the Outlets from 2021 to 2024, bringing experience in the food business to their latest venture.
According to reporting by DougCo Social, the owners were aiming for a mid-to-late October opening. However, the shopping center’s official listing continues to describe Peak Pizza as coming soon, and a confirmed opening date has not been announced.
Peak Pizza’s arrival will add another dining option to the Outlets at Castle Rock, giving shoppers a place to pause for a meal or grab something to take with them as they make their way around the center.
