Good Trouble plans to open at Jefferson House, at 8310 W. Jefferson Street in downtown Peoria, partner Kell Duncan told What Now Phoenix. The bar will serve a shared gathering area surrounded by 10 local businesses.
Duncan, who also owns The Churchill in downtown Phoenix, is developing the project with Stephen Allen and Banquet Hospitality Group’s Lance Linderman, Gavin Linderman, and Micah Bentley. The partners own Good Trouble through Jefferson House LLC.
Gavin Linderman suggested the name Good Trouble, which the partners paired with a black cat mascot. For Duncan, it’s a playful nod to getting into “the good sort of trouble,” fitting the neighborhood bar he hopes to create.
Good Trouble will have 24 beers on draft, including a rotating selection from local breweries, along with spirits and a limited wine selection.
The bar will resemble a shipping container, though it is being built as a separate structure. Plans include three service wells, with cold storage directly behind the bar to keep the draft lines chilled. The partners are working with local vendors on shelving, bar tops, and the back bar.
Jefferson House’s other businesses include Stoop Kid, Local Hive Pizza Co., Hope’s Frybread, The Book Haul, Chewk’s Cookies, JOOS, Lovely Goods, Fade & Blade Studio, and The Nile Theatre. Duncan said the announced lineup is complete.
As of the October 22 interview, Duncan estimated the development was eight to 12 weeks from fully opening. Jefferson House received its certificate of occupancy the previous week, later than the partners had hoped. The remaining schedule depends on interior build-outs for the bar and its neighbors.
“Our goal would be to have everyone open at the same time,” Duncan said.
Good Trouble could be ready sooner than some of the restaurants because its space requires less work, he added. An exact opening date has not been set.
For Duncan, the project also brings his work closer to home. He grew up in the Avondale and Goodyear area, and the Banquet partners approached him about creating the West Valley development together.
“We just want to get established and try to be a benefit to the community, which is the goal and why we try to support small and local business,” he said.
