Not long after news broke of fast casual roast beef chain Top Round‘s arrival in Las Vegas at Park MGM, a second location is already in the works next door, at New York-New York Hotel and Casino. Paperwork filed by the casino estimates a construction budget of $285,000 for the new Top Round.
The chain got its start in 2013 on the West Coast, when owner Anthony Carron was trying to decide which restaurant to space to move into. At the time, Carron recalled in a conversation with What Now Las Vegas last month, there was a huge uptick in elevated burger fast casual concepts. But no corresponding renaissance was occurring in the roast beef sandwich space, a $3 billion market ruled without competition by Arby’s.
Top Round’s slow roasted beef is sliced to order for roast beef sandwich varieties like Beef & Cheese, Bar-B-Cue, and Beef on Weck with Atomic Horseradish. Chicken sandwich and burger offerings are also frequently found on the Top Round menu. The Park MGM location is expected to feature a selection chicken tenders and wings, along with a craft wine and beer program, featuring twenty taps. It is unknown whether the chain’s second location on the strip will follow suit.
What Now Las Vegas reached out to Carron on Thursday morning. Carron was unavailable for comment.
