On September 21st, Cellar Door Provisions, a small café run by James Beard nominee Chef Ethan Pikas and Baker Tony Bezsylko, posted across social media channels, “we’ll be temporarily closing soon for 4 to 6 weeks of renovations, just as soon as we receive the green light from the city.” It appears that time is likely approaching.
Tony Bezsylko filed a permit application with the City of Chicago in August of this year. According to documents obtained by What Now Chicago, the permit was issued on November 9th. The permit is for “alternation of existing first floor restaurant” and lists the primary work as a “new exterior storefront.”
Cellar Door Provisions first opened in 2014, reports Bon Appetit, which describes the intimate eatery as a “hyper-seasonal” café. According to the publication, Cellar Door evolved out of pop-up collaborations between Bezsylko and Pikas centered around Bezsylko’s loaves of bread. You can currently find Cellar Door’s a-la-carte menu posted to the eatery’s website. It’s a walk-in only affair and no substitutes are possible, according to Cellar Door’s social media.
