In September of this year, What Now Chicago broke the news of What If Syndicate’s newest concept, an eatery called Delilah’s expected to open on State Street in Gold Coast. Eater Chicago now reports the eatery should open by the end this year, but under a different name.
It turns out Mike Miller, owner of the bar Delilah’s near Lincoln Park, took issue with What If Syndicate’s proposed name and as a result, the team pivoted. Café Sophie will be an all-day European-style café with pastries, wood-fired breakfast sandwiches, and a full bar, reports Eater Chicago. You can also expect to find a few home kitchen essentials from a retail section.
What If Syndicate, the hospitality group operated by David Pisor, Jim Lasky, Molly Currey, Matt Winn, and Michelin-Star Chef Danny Grant, is also behind Chicagoland eateries like Maple and Ash and etta. The group is reportedly already on the hunt for sites around town to house additional Café Sophies and plans to bring the concept to Dallas and Houston.
The eatery has taken over the space that last housed The Little Beet Table, which will provide modest in-door seating with a spacious patio. Expect to enjoy the new offerings of Café Sophie at the flagship location by mid-December.
