The Vernon Hills location is operated by franchise owners Lisa, Devendra, and Siddarth Patel. In an interview with What Now Chicago, Lisa and Siddarth said the location aims to open in mid-June, pending permits, though the timeline remains tentative and subject to change. “We do plan on having a grand opening ceremony on August 15, which is India’s Independence Day.”
Honest will be located in an area with a large Indian community. With this location, the franchisees aim to provide authentic food to the Vernon Hills community without residents having to travel far, as there are few similar restaurants in the area. The restaurant will occupy a space formerly home to the convenience store Vernon Convenient and will be next to Spice Bazaar, an Indian grocery store offering a variety of Indian brands and imported fruits and vegetables.
Honest Indian started in the 1970s in Ahmedabad, India, as a street cart and today operates across the United States, the United Kingdom, Canada, Australia, and Thailand. The concept behind the restaurant is entirely food-centric, emphasizing that nothing on the menu is frozen or pre-manufactured. Everything is prepared fresh, with attention to dietary needs, including vegan and gluten-free options. Its menu centers on high-quality vegetarian food made with fresh ingredients and an authentic handcrafted blend of Indian spices, ensuring consistent flavor.
The restaurant also incorporates personal touches and vibrant colors throughout the space, aiming to create a warm, inviting vibe where people can gather and feel at home. The new location aims to offer a comfortable, earthy fast-casual atmosphere and attentive customer service. “We want people to walk in and want to come back. We want all of our customers to have an experience that is long-lasting. That is success to us,” Lisa told What Now Chicago.
