As first reported by Dayton Daily News, Bae’s Bakery is a new bakery concept in the Dayton area that will soon launch. For now, the bakery, which is owned by Alisha Bergsten, is operating under the Pizza Bandit located at 700 E 4th St, which Bergsten uses as a ghost kitchen to bake her sweet treats. Bergsten started baking biscuits and cinnamon rolls on the weekends this past fall for Pizza Bandit when that concept launched its weekend breakfast service hours.
However, shortly after starting the job, the culinary school graduate started testing other recipes and sold the items during the late-night slice pizzeria’s operating hours. She received positive feedback from the Pizza Bandit’s customer base, and has since created a social media presence for Bae’s Bakery and started the process to launch the business.
Soon the bakery will be able to fully operate under its own name, expand its menu offerings and take customer orders. Bergsten tells What Now Columbus that she is in the process of getting various licenses and some approvals from the health department and once those things are in place, the bakery will be able to offer more selections, and she’ll be able launch the business’s website, where customers can preorder baked goods, such as for celebrations like birthdays and holidays.
Currently, Bae’s Bakery has tested out recipes for items like cinnamon rolls and cookies, along with the bakery’s signature creation, called Gem Cakes. The small cakes open into two pieces and are made with a chocolate ganache outer coating, with a frosted cake on the two inner portions. Bergsten made them in honor of the Gem City, and the ganache coating is faceted and often incorporates edible sparkles, to resemble the intricate facets and shine of a gemstone.
In terms of looking ahead this year, Bergsten will continue to operate out of the Pizza Bandit’s kitchen, so customers can continue to find her items there. But, she aims to expand the bakery’s offerings to five Gem Cake flavors and also offer cookie sandwiches. Bergsten said she’s looking forward to hitting all the major holiday seasons and is planning to have rotating flavors that will correspond with the various holidays.
And with Valentine’s Day, St. Patrick’s Day and Easter all coming up in the next few months, there’s sure to be a number of delicious creations that Bergsten will whip up for her customers. According to an Instagram post by Bae’s Bakery, a chocolate covered strawberry inspired version of the signature cake may be something she offers for next month’s holiday.
“We may or may not be gearing up for Valentine’s Day with this decadent twist on the classic treat. Inside this Gem Cake you’ll find Ghirardelli chocolate ganache buttercream, chocolate cake soaked in housemade strawberry purée, and fresh slices of strawberries. I also made it a little sparkly you know, for the occasion,” the post reads.
