New Brewery That Combines Science, Technology and Beer Opening Next Year

Species X Beer Project will use science and AI to bring a new beer experience to Columbus.

According to recent reporting, a new brewery that will serve food is on its way to Columbus. Owner Beau Warren plans to open Species X Beer Project next year at 408 N 6th St, in the former home of Platform Beer. What Now Columbus spoke with Warren, who shared the inspiration behind the brewery, how data will inform some of the beer offerings and what customers can expect from the brews and the menu offerings at the establishment.

Species X Beer Project will use a data driven approach, with the help of AI, to make predictions on some of its brews, Warren said. Using a set of datapoints, Warren said the AI makes correlations and connections to make predictions on a recipe that it has yet to see. This newer, technology led approach to brewing is something that Warren has wanted to do for a while. 

“I came up with the idea a few years ago after I took a trip to Montreal to study brewing microbiology. After that I knew I wanted to create a new novel beer experience,” Warren said.

Although the brewery will use AI as well as genetically engineering yeast and other beer ingredients for some of its brews, not all the beers will be made using science or tech, some will be made in a more traditional way. Also unique to the location will be the 26 taps available, and Warren said two of those taps are outfitted with a randall, a device that works as an infuser that will allow for different flavors to be imparted into those beers.  

Additionally, the brewery will feature natural wines, and some spirits such as bourbon. The food menu is still under development, but guests can expect a selection of salads, focaccia pizza and toasted focaccia sandwiches.

If all goes as planned, Warren hopes to start brewing in the facility by the end of the year, with a targeted opening timeline of early 2024.
