A new restaurant is set to take over the former Table 6 space in Denver, bringing a more casual dining concept from the team behind Michelin-starred Beckon and Major Tom.
Called Holm, the upcoming American bistro is being developed by Paired Hospitality, with chef Duncan Holmes and his wife, Allison Holmes, leading the project alongside partners Josh Elson and Craig Lieberman.
According to Westword, Holm is expected to open in October at 609 Corona Street, following Table 6’s closure earlier this year after more than two decades at the neighborhood location.
The restaurant will be the first Paired Hospitality concept outside of Denver’s RiNo neighborhood and will also be the group’s largest space to date. The 50-seat restaurant is more than twice the size of Beckon, the intimate restaurant on Larimer Street that earned Colorado’s first Michelin star in 2023.
While Holm will have a different feel from Beckon’s tasting-menu format, the new restaurant will still reflect Holmes’ focus on seasonal ingredients. The menu is expected to center on Colorado produce, with familiar, approachable dishes alongside vegetable-focused offerings.
Early examples include brick chicken with seasonal vegetables, pork ragù served with housemade pasta and other dishes that highlight produce sourced in part from Paired Hospitality’s farm in Lakewood.
For Duncan and Allison, Holm adds another dimension to the hospitality group they have built around Beckon and Major Tom. Duncan serves as culinary director and executive chef, while Allison oversees the guest experience. Together, they have developed concepts centered on thoughtful food, hospitality and seasonality.
With its October target, Holm is expected to bring a new dining option to the Corona Street neighborhood just a few months after Table 6 served its final meal.
